1 large (15 oz) sweet onion, peeled and ends trimmed
1 tbsp. butter (or vegan butter)
1 tbsp. extra virgin olive oil
1 tsp. cajun seasoning
¼ tsp. salt (plus more when serving)
Optional Additions
¼ tsp. garlic powder
¼ tsp. old bay seasoning
Finely diced parsley for garnish
Instructions
Preheat oven to 375°F (190°C).
Use a melon baller or spoon to scoop out the top center of the onion (about ⅓ of the way down) to create a well.
Place the onion on a sheet of aluminum foil. Add butter into the well.
Mix the cajun seasoning with olive oil and pour over the butter into the well, allowing the mixture to drip down the sides of the onion. Season with salt.
Seal the onion tightly in the aluminum foil. Place in a small baking dish or cast iron skillet to catch any oil that seeps out.
Roast on the center rack for 1 hour. Remove and check - the entire onion should be fork tender and the center should jiggle. If needed, reseal and bake another 10 minutes.
Optional: Turn oven to broil. Open the foil, drizzle with more butter or olive oil and a pinch of salt. Broil 5-10 minutes until golden brown, watching closely to avoid burning.
Peel away the outer layer. Pour all the juices from the foil over the onion. Enjoy each layer with an extra sprinkle of salt.
Tips:
Yellow onions hold their shape better than white when roasted
Vidalia onions work great for extra sweetness
The broiling step adds extra caramelization and texture - highly recommended!
Don't skip pouring the foil juices over the finished onion - that's where the flavor is
