Bacon Avocado Cups with Balsamic Glaze

  1. Halve the avocados lengthwise and remove pits.
  2. Rub avocado interiors with lemon juice drops to prevent browning (optional if serving immediately).
  3. Crumble cooked bacon and fill each avocado half cavity with one piece of bacon.
  4. Over low heat, melt butter with balsamic vinegar and garlic, stirring constantly for about 1-2 minutes.
  5. Once the mixture boils, remove from heat immediately.
  6. Drizzle glaze over prepared avocado halves and serve.
Serving Suggestions: This works great as a fun appetizer or side dish. The healthy fats from the avocado make it filling and satisfying. For extra richness, some people add a poached egg underneath the bacon.
